Healthy Cookie Dough

Corky Dough

There are a few items out there that work great when you are happy as well as when you are sad. These are things like cake and alcohol…. comfort foods. The normal problem, however, is that if you are on a diet or just eating healthier in general, you end up feeling like crap for eating it later.

For me, cookie dough is one of those things. I remember going to our dorm store in college and nursing my Lioncash from Penn State to buy a roll and take it to my room. The thought was to have it there for a treat, but more often than not it would be gone within 24 hours from happy or sad snacking. Although enjoyable, there is no feeling happy go lucky realizing you just ate 24 servings of cookies.

Now that I am older, I still want to eat cookie dough. Because I am a mom that lives on the edge, my kids eat it too with raw eggs and all. I do, however, make sure they don’t eat too much which can be really hard! So about 2 Years ago I started looking for a healthy and Clean (yes, Clean) version of cookie dough and have perfected it over time. The best Best part? There are a ton! Made with chickpeas as a base, you can make the entire thing gluten free if you want to and it can be eaten alone on a spoon or as a dip with other items.

Ingredients:

2 Cans Garbanzo beans

1 Whole banana

1/4 Cup Oats

1/2 Nut Butter (prefer almond)

1 Tsp Vanilla

Dash Salt

2-3 Tablespoons Honey or Agave Syrup

1/4 Cup Milk (prefer Cashew)

Chocolate chips as desired

Directions:

  1. Place all ingredients other than chocolate chips into a food processor
  2. Pulse until a smooth batter consistency.
  3. Scoop out into a bowl and add chocolate chipsOYRGE5167[1]
  4. Stir in and store for up to a weekAEWNE2420[1]

The kids help me make it and I am fine and even happy to give them heaping bowls of it because it is healthy with lots of protein and vitamins. #momwinKUJL1570[1]

**A thing to note, which you kids may love but you may not…..

“Beans beans, they aren’t a fruit

But the more you eat, the more you’ll toot”

Do not eat a large portion before you go out on the town :).YKULE9677[1]
