While I love carbs of all sorts, my pants have politely been telling me for a few weeks now that they don’t love me so much. In my single days it would have been easy to solve that, just don’t have them in the house. Now that I am a mom and have that whole responsibility thing of feeding my family, I needed another game plan. Sure, there are still days that I will make the mac n cheese for them and try to distract myself with something else, but other times I make a faux carb so I can eat a ton and not feel guilty while not missing out on what everyone else has as well.
One of my favorite go to’s which is also pretty versatile is cauliflower rice. Yes, you can buy it at the store as well, but unless you are Mr. Moneybags you might as well make it at home. Once made you can change it up with seasonings/additions to go with your meal such as Italian seasoning and parmesan for Italian, soy sauce for Asian, Cilantro and Lime Juice for Mexican etc. Essentially, it acts as rice so rice it up!
1 large head cauliflower
1 small onion (diced)
1 large carrot (diced)
- Take 3-4 florets at a time into a food processor and pulse until it is a small rice size consistency. If you put too much in at once it will become mushy and will not all chop appropriately. This takes about 3 -4 times to do an entire head. Place in a bowl and set aside.
- Saute onion in a nonstick pan OR with a very small amount of olive oil until transluscent.
- Add carrots and cauliflower as well as S&P and garlic to taste (approximately ½ tsp each)
- Mix and continue stirring for 5-8 minutes. The longer you cook the softer it gets so I tend to stop around 5 to leave some bite and texture.
It is really that simple to make rice. I find that it lends itself very well to just a splash of soy sauce and veggies topped with salmon. Since it is very healthy you can easily have a cup or two completely guilt free and your kids will love it too. In full disclosure, this last round my kids said they didn’t care for the “vegetables” in the rice. When I asked what they meant ( as it was all vegetables ) they said they didn’t like the carrots haha. Next time I will have to make my rice “without vegetables”.
