Cheesecake. It’s something we would love to eat everyday, right? Unfortunately the regular kind comes full of fat and sugar and well, you can’t make just 1 slice so why not make and eat the whole thing?! I gotcha covered!! A single serve faux cheesecake dip that is healthy and high in protein – for realsies!!
The base of this is cottage cheese. You know, the stuff you buy at the store but then never really use because are you just going to eat a plain bowl of it like a savage? I think not. Cut to 3 weeks later and you go, “Oh crap, the cottage cheese is old and moldy” so then you pitch it. During that weeks shopping trip you promptly remember that oh yeah, you are out of cottage cheese, better get some more. Thus, the endless cycle continues. I have a ton of great ways I learned to utilize this stuff and this just so happens to be one of my favorite recipes.
I love it because it is easy to make, easy to clean up, tastes good and my kids will eat it. Need I say more?
“Cheesecake Dip”
Ingredients
2/3 Cup Lowfat Cottage Cheese
1/2 Tsp Vanilla ( a splash)
Dash of Cinnamon
2 Stevia Packets ( or 1 Tablespoon Sugar)
Option – Tablespoon of Peanut Butter
Directions
- Dump all of the ingredients in the blender
- Puree 30-45 seconds until completely smooth
- Serve with sliced apples, pretzels, graham crackers etc
Keep it refrigerated if you actually have any leftover. Other options you can do with this are to add an egg and bake it up similar to cheesecake.
