Perfect for the lent season or any time you want fish that is more flavorful that just regular breaded fish. The flavor in this is almost refreshing and although you can panfry it and then bake it, I prefer to just bake it and it still gets a nice crust but it just a little healthier. Almond Encrusted Tilapia
Ingredients
6/7 Tilapia Filets
Flour to coat
1 Cup Chopped or ground Almonds ( I chop because I prefer bigger chunks, you can make it as fine as bread crumbs in a food processor)
1/2 Cup Grated Parmesean
1 Tsp Lemon Pepper Seasoning
1Tsp Salt
1 Tsp Garlic
2 Egg
Directions:
- Preheat oven to 375
- Mix eggs and set aside
- Mix together almonds, cheese and seasoning and place in shallow bowl
- Coat each filet in flour, then dip in the egg wash and then coat with the almond mixture
- Place on a sheet pan and into oven for 10-15 minutes ( depends on thickness of fish)
- Remove and serve with fries or atop a salad. This fish is versatile and has great flavor even without a dipping sauce.
