Fall in a cup

It’s Fall Y’all!!  Ok, I am not southern and I can’t really pull off saying that out loud, but it’s true!  Getting comfy and cozy is one of the best parts of fall and it is also the perfect time of year to make big batches of soup for warm comfort food.  This will save you time and warm you up all while being healthy! Check out some of my recipes below for one of my favorite go to’s!

Butternut Squash Soup

**Makes approximately 4 servings**

Ingredients:

1 Onion
2 tbs Olive Oil
1 Butternut Squash
2 Cups low sodium Chicken Broth (or veggie broth)
Salt
Pepper
Nutmeg

Directions:
1. Sauté onion in olive oil until translucent

2. Add squash and stock and simmer for 20 minutes

3. Remove the cooked squash and liquid in 3 smaller increments and blend until smooth in the blender ( some work better for soups than others such as this one).

4. Combine together and add salt, pepper and nutmeg to taste.

Mix it up!!  Add some chipotle for a spicy kick or chicken and pumpkin seeds for protein and crunch.  I like to do a drizzle of plain Greek Yogurt in place of sour cream and some almost as well for a creamy and high protein snack!
